After seeing so many adai dosai in blogs, I found that no two adai recipes are the same. U all have your own style of making it with different proportions of lentils\/ dals. So I wanted to post mine with which you get a crispy (moru moru) adai. My husband likes this adai just because its crispy. I always eat adai with sugar as accompaniment. But my mom used to make curry leaves chutney. This is also a great combination. So I have given the recipes of both adai and chutney.<\/p>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<a href=\"https:\/\/i0.wp.com\/www.chitrasfoodbook.com\/wp-content\/uploads\/2009\/03\/adai.jpg?ssl=1\" style=\"margin-left: 1em; margin-right: 1em;\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" alt=\"Moru moru adai\" border=\"0\" height=\"640\" src=\"https:\/\/i0.wp.com\/www.chitrasfoodbook.com\/wp-content\/uploads\/2009\/03\/adai.jpg?resize=512%2C640&#038;ssl=1\" class=\"wp-image-5053\" title=\"Crispy adai\" width=\"512\"><\/a><\/div>\n<\/p>\n<div id=\"inpostAd1PlaceHolder\">\n<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<p>Ingredients required: (1 cup = 240ml)<\/p>\n<ul>\n<li>Idli rice \u2013 1 cup<\/li>\n<li>Toor dal \u2013 1\/4 cup + 1 tbsp<\/li>\n<li>Chana dal \/ Kadalai paruppu \u2013 1\/4 cup <\/li>\n<li>Red chilly \u2013 5 \u2013 7 nos ( Depends on spice, I used 4) <\/li>\n<li>Ginger \u2013 A small piece to grind&nbsp; &amp; a small piece to add in batter.<\/li>\n<li>Asafetida \/ Hing \u2013 1\/4 tsp <\/li>\n<li>Salt&nbsp; &amp; water \u2013 as needed. <\/li>\n<li>Big onion \u2013 2 nos (Finely chopped) <\/li>\n<li>Curry leaves \u2013 a sprig (chopped) <\/li>\n<li>Coconut pieces \u2013 1\/4 cup <\/li>\n<li>Cooking oil \u2013 to cook. <\/li>\n<\/ul>\n<p>How to make:<\/p>\n<ul>\n<li>Wash and soak the rice and dals together for 2 &#8211; 4 hours. <\/li>\n<li>Grind it slightly coarse like rava by adding red chillies, hing and salt. <\/li>\n<li>Add water if adai batter is too thick. Adai batter should be in pouring consistency. Mix it well.
